kaya or coconut jam which made from coconut milk, egg, pandan juice and sugar. It is a healthy morning breakfast or evening snack for kids even grown-up people love to have it. Basically, kaya is served on toast or crackers. You can have it along with tea and soft-boiled egg with medium dark soya sauce and white pepper.
Ingredients For Kaya
- 500 ml thick coconut milk
- 3 tablespoons Pandan Juice
- 470 gm fine sugar
- 8 eggs
- For caramel, we need 60 gm fine sugar and 2 teaspoons hot water
Directions
1Take a big steel mixing bowl, add 500 ml thick coconut milk, 3 tablespoons pandan juice and add 470 gm fine sugar combine together, mix until sugar is dissolved After that beat the eggs smoothly. Then add in and mix well. After mix well sieves the mixture transfer to another steel bowl.
2Bring 1/4 pot of water to the boil, reduce to medium heat. Here I am using a double-boil method and keep stirring. After 10min, the mixture begins to thicken and heat should be on low heat. Stir continuously another 5 min, the mixture has thickened. Now cover with a lid and cook for 50 min.
3Making of Caramel, all we need a steel bowl, put 60gm fine sugar and add in 2 teaspoons of hot water (low heat). Cook it until it becomes caramel. Later add this caramel with kaya and mix together. Stir until the kaya becomes soft and smooth. After sometime when the mixture completely cooled, transfer the kaya into a clean glass jar and refrigerated.
