Chicken Kosha is a Bengali Version. It is a Bengali authentic Dish. Kosha is defined as fried for a long time with ground and whole spices over medium heat until onion, ginger and garlic have dissolved into a thick paste.
- Chicken 1 Kg
- Sliced onion 2
- Ginger-Garlic Paste 2 Tbs
- Plain Yogurt 2 Tbs
- Red Chilli Powder 1 Tsp
- Turmeric Powder 1/2 Tsp
- Coriander Powder 1 Tsp
- Cumin Powder 1/2 Tsp
- Kashmiri Red Chilli Powder 1Tsp
- Black Pepper Powder 1/2 Tsp
- Whole Garam Masala
- Tomato Ketchup 2 Tbs
- Salt and Sugar According to taste
- Cooking Oil ( As Per Your Choice)
1In a bowl wash and cleaned the chicken. Add Red Chilli Powder, Turmeric Powder, Salt according to the taste, ginger-garlic paste,2 tbs of plain yoghurt,1 tbsp mustard oil. Mix everything to coat the chicken with the masala or spices. Cover and Marinate for at least 1hour.
2Meanwhile, Heat 2tbs of mustard oil in a Pan. Add 1tsp of sugar and caramelize it. This imparts a nice colour to the dish. Keep stirring sugar, until it dissolves.
3Add whole garam masala( Bay Leaves, Cinamon Stick, Green Cardamom, Cloves. Add sliced onions and fry till it turns brown with a golden tinge. Add 2tsp of leftover ginger-garlic paste and fry till the smell goes away.
4Add marinated chicken cook over medium heat for 5-6 min to seal the juices. Cover and cook for 8-9min on a low medium flame. Add water to the grounded spices and make a smooth paste- Kashmiri red chilli powder, Coriander powder, Cumin powder, Black pepper powder and Garam masala powder. Mix nicely and cover and cook on a medium flame for 6-7min. After 6-7 min adds 2tbs of tomato ketchup. Then Stir and further cook for 4-5min on a low flame. Cook uncovered for 6-7min. Now the is ready to serve. Enjoy the very delicious dish Bengali chicken kosha.
