Lemon Rice

Lemon and Cardamom Basmati Rice is very quick and easy recipe. Basmati is a long slim-grained aromatic rice which is traditionally from the Indian subcontinent. It has a typical pandan-like flavour. It is diet free and a great source of energy.
Ingredients
  • 1/2 cups of Basmati Rice
  • 3 cardamom pods
  • 2 tsp lemon juice
  • 1/2 tsp Turmeric
  • 1 tbs Black Mustard seeds
  • 6-8 Curry Leaves
  • 1 tbsp grated Ginger
  • Oil
  • 1tbsp grated Lemon Zest
  • Freshly chopped coriander

1To make lemon and cardamom basmati rice first put the rice in a strainer and rinse under cold water. Transfer the rice to a large saucepan. Now add 3 cups of water and set over high heat. Add the cardamom and a pinch of salt to the pan and stir well to combine.

2Then bring to the boil and reduce the heat. Cook for about 20-25 mins, until the rice, is tender and drain well and place it to a large bowl. Now heat the oil in a pan set over a high flame. Add mustard seeds and cook until they sputter. Later add curry leaves and grated ginger and cook it for 1 min.

3Pour the oil and spices over the rice and stir well. Now add fresh lemon juice and 1 tbsp of lemon zest. Mix them well to combine. Now lemon and Basmati Cardamom Rice is ready to serve. Garnish with fresh and finely chopped coriander.
